We always stay on a condo right on the beach (usually Port Royal) so we never drive on the beach.

Being able to drive on the beach is one of the greatest things about texas beaches. If you want an area with a lot less people and cars try north padre island instead.
We are heading out to port A this weekend (staying at sand castle condos)

I forgot to add that after you eat at Snoopy's, heading back into Corpus on SPID, take the Ennis Joslin exit and drive over to Ocean Drive and take that pretty drive back along the bay front. There are a couple of small pull in parks along there to to get out and stretch your legs. Hopefully if there weather is clear and the water isn't too brown, it's a really nice scenic drive.

While you are at the beach in Port Aransas, don't miss walking out on the stone jetties. Take some popcorn or something to feed the seagulls.
Visit the Texas State Aquarium in Corpus.
Edit: I found this link to the Columbus ships in Corpus, but the kids might be to young to appreciate them. http://www.cctexas.com/?fuseaction=main.view&page=2555
In Rockport/Fulton City Marina and in Aransas Pass you can drive down to the docks where the shrimp fleet docks and see the shrimp boats.
When the kids are a little older they might get a thrill out of visiting the Aransas Wildlife Refuge, there are trails you can take where you can see alligators in the ponds along the trail.

The Aransas Wildlife Refuge is kind of cool - smaller kids may not appreciate it - but don't go when it's hot. The critters are smarter than we are and are hiding out of the midday sun. We made that mistake once and really regretted it.

Fish the jetty is a good and easy way to pass time. You can always catch something with dead shrimp even if its a crab...
