You really are overthinking it. Buy the car, wherever you want to buy the car. NJ is probably easier for you. If you move shortly afterwards, register it wherever you move. Don't worry about registering it in NJ, drive it to wherever your going, and register it there. If you do get hassled about registration, show the bill of sale and explain yourself.
