Factory clearcoat/basecoat black color repaint. No body work.

What other questions do I need to ask?
How many coats of paint? of clear coat?
BTW, what number of coats of paint and clear is considered acceptable?

What type of questions do I ask about wet sanding?

You see what I am after. A check off list.

I visited a few forums but they are at a level far above mine. I am an engine guy not a painter.

I am removing emblems and hood windshield nozzles prior to taking vehicle to the shop.

Might want to research on internet by brand because they also offer many different grades of primers at different price levels. That now days is the real protection coat. The finish is only as good as the prep of body and the guy behind the gun.

At a minimum I would do 2 coats color, sand, 2 coats clear. Look at paint manufacturer/seller websites for more information. Try Eastwood, Sherwin-Williams Automotive, House of Kolor.

What are you actually doing? A complete repaint?

Ask about the prep work. No quality respray ever happened without a lot of time and effort in the prep work. If there are spider cracks in the bumpers, they need to be sanded out. Then the bumpers re-sealed. If there are stone chips, scratches, dings, etc, in the car, they all need to be properly sanded, filled, etc. Black will especially show imperfections not taken care of during prep.

yes.

I mean no body work as no body work needed. No dents or rust.

If you are taking it to someone else to paint, why are you removing the emblems and such yourself? Are you getting a significant discount to do this? The main reason I ask is that if you scratch the paint putting these things back on you it's your problem, whereas if the body shop scratches the paint putting them on it's on them.

Modern GTO side emblem not a complete peel back emblem. Has both sticky back and prongs in the fender. I feel better removing myself.

The rear ones are sticky only but you know in for a penny...

I would remove the headlights and tailights for them as well but do not believe it will be allowed.

I would just go with the reputation of the shop, ask around. There are always a few quality-oriented shops.

Be clear that you want a first-rate job, that you are willing to pay for it, and that you are willing to give them the time needed to do first-rate work.
