I do make similar trips elsewhere but it only happens at this one particular location.
Looking for an electrical interference condition, I went to google maps at the location where it occurs.
In this picture, top left corner is I-90 where the light comes on. Bottom right is a tall, conical shaped building that is making me scratch my head. No google labels and if I zoom in closer, there's what appears to be at least 3 gates to get to it as well as perimeter fencing. Hmmm... I wonder what's in there.
UFOs the government is storing? Clever of them to hide them so far from Roswell.
Engines computers do "self-tests". Some of those self-tests take awhile to preform - a certain amount of time after reaching a certain speed or elevation or operating temperature, etc.
And the test may be done three times in a row over a period of time, then if still failing, set a check engine code.
Other self-tests occur right away.
The BEST way to learn about these codes and WHAT SPECIFICALLY activates them - how to troubleshoot them, etc. is to purchase the full set of your vehicle manufacturer's service documentation for your specific year/model vehicle. (I'm talking 2000 pages of technical information for a complete set - NOT a Haynes manual.)
Note all vehicles are different, the following has nothing to do with your specific vehicle, but this is an example of some self-testing stuff on another vehicle...
I only take that road about 3-4 times per year. Happens at that same spot every time but doesn't come on at all the other 360+ days of the year.
Record it or it doesn't happen :-)
Take a trip this month and record the event and post it here. I for one "want to believe" but until I see proof there's simply no way I can prioritize researching this.
This time, I drove the 100 miles to get me close then stopped about 15 miles before where the light normally comes on and got some gas and another stop for food.
Told the family that the check engine light was going to come on at approx. mile marker 35. We all watched the dash... it didn't come on... YET. Seven miles later, it came on.
It remained on for the rest of the trip (another 150 miles).
It went out before we made the return trip. Drove the full 270 miles back and the light didn't come on in Erie.

It's too awesome. All sorts of things could be causing the issue. I would try to raise awareness by contacting a group that investigates X-files like things vs just posting about it here. You have my interest, but I don't investigate these types of things, I am just curious... could it be an electromagnetic phenomena? What could do this to a vehicle? I want to know
Are you sure you are not pulling or coasting a slight grade/hill without realizing it ??
FWIW, there is a stretch of I-70 in western Colorado where you would swear you are on level ground but you keep having to push the gas to keep up speed. Kind of an optical illusion sort of thing. I've done it several times.

A long time ago my friends and I visited a hill like that nearby our University... the hill had a driveway on it and the optical illusion was really complete as all the surrounding land supported it. People would throw their vehicle in neutral and roll up hill.
i'm so happy i'm not the only one experiencing this thing! theirs a certain spot comming out of ashville n.c. where my check engine light comes on. it is exactly right in front of a pull off area where interstate i-26 just starts to go up the mountain. i can copunt on it comming on every single time like clockwork! the same exact spot everytime. i've counted 9 times in a row and each toime i take it to have the light checked they tell me its an 02 sensor interference or something like that. got me buffaloed!!!!! anybody got any real explainations???? i sure don't!
