I do not put a high premium on "luxury" interiors/amenities/driving experience, though cutting edge media/technology/connectivity would be great. I would also like something that is reasonable on fuel consumption/the environment.

Any suggestions/experiences appreciated.

Sounds like the Subaru Forester would fit your requirements very nicely.
