Now how does one SUV suddenly just veers into on coming traffic?
Drunk/drugs, preoccupied with something like a phone, medical issue or mechanical failure.

Then how does 7 people all die in one SUV. No seat belts? Air bag has to absorb some impact.
If both cars are traveling at 60 or 70 it's like hitting an immovable wall at 120 or 140. Crumple zones, seat belts and air bags are only going to help so much. Anything over about 60 or 70 (single car hitting a wall) and you are getting into that area where death is possible when you have sudden stop like that.
You can make all of the excuses you want but the Crash Rating by the Insurance Institute says in a frontal overlap crash in a 2016 Fore Runner is rated at marginal. Marginal. I'd expect something like that from a cheapy vehicle but not a Toyota. The worst news for me, my youngest girl is driving a 2017 that has the same rating. Looks like I'll be on the road between now and Christmas and get her out of that POS. It's been nothing but headache since she bought the junker. Not a lot of difference between a Yugo and her Fore Runner with non-stop failures and recalls. And yes, she has it serviced at the dealership only. You'd think they'd have a clue how to fix one. By the pics in the hews vid you can't tell what the other car is. I've seen worse wrecks where everybody walked away.
This was an accident involving 2 SUVs. Now how does one SUV suddenly just veers into on coming traffic?

Just doesn't make much sense..
Both vehicles were ForeRunners, traveling on a straight, flat stretch of road so presumably going pretty fast. The veering driver may have been distracted or fallen asleep. There was extensive damage to both, and one rolled onto its roof. After seeing the damage in online photos, I'd be more surprised if anyone had survived.

There are literally thousands of reasons. The driver could have had a heart attack, he could have been drunk, he could have been texting, there could have been a mechanical problem with the car.

Same way Diane Schuler killed 8 people, including herself, on the Taconic back in 2009. Reckless driving, speeding, drugs, alcohol - any one, or a combo, of all 5.
