Hard to pick one in each category....it would be some combination of the following. No two-pedal cars for me.
Luxury touring car - Cadillac CTS-V Wagon 6MT or first-gen Porsche Cayenne GTS 6MT
Sports car - Lotus Evora 400 6MT or Porsche Cayman GT4 or first-gen Audi R8 V10 6MT or C7 Corvette Grand Sport 7MT
Around town - Mazda6 Touring 6MT or Honda Accord Sport 2.0T 6MT or Genesis G70 2.0T 6MT
Truck - '85ish Toyota SR5 Pickup 5MT
I once had a girlfriend whose parents were rich. Her dad dabbled in ranching and ran sheep and cattle on some acreage. He had hired help for most of the work, but went out there often himself, driving a fairly new Cadillac. He sometimes hauled sheep or young calves in the back seat and drove it all over pastures and hillsides. My girlfriend and I went with him one time and I found myself in the back seat, in charge of a large sheep, that kept trying to jump over into the front seat. His wife refused to ever ride in that Cadillac.
Interesting concept.
First, I would quite likely get our 2006 PT Cruiser Turbo Convertible completely rebuilt, top to bottom,. bumper to bumper.
Then, I would have our 1966 Chevelle 4 door sedan fully restored, with updated seat belts and stereo.
Third would be a complete IROAN (Inspect, Repair Only As Necessary) on the 2005 Wrangler Unlimited.
Fourth would be an upgraded Class A motorhome, perhaps a 32 to 36 foot diesel pusher, Cummins engine, Allison transmission, low miles.
In addition, I might do an IROAN on the 1999 Dodge Ram 2500, then build a garage big enough to hold the motorhome or the vehicles that would remain behind. Hook the Jeep to the motorhome, take the remainder of the money, and run away from home for a year or three.
Or, I die, whichever comes first.
I find it interesting that so many people think of cars as soon as they get some money. I've been guilty of that myself, but since this is an automobile forum, I'll play.

-performance upgrades for my current soft top (ever notice how people love to exclaim they own such and such a car?)

I'm not into big or flash and on a reasonably practical level I might go for an inexpensive electric powered runabout for heading into town and the local markets- maybe a Renault Zoe.
Something biggish for when we haul stuff, visiting friends etc so a reasonable sized SUV- maybe a high performance diesel BMW X5?
A classic for meets- Citroen DS/CX/SM? Or if I'm feeling really silly a Facel Vega HK500- French body Chrysler V8 engine.
Something that doesn't matter if it gets trashed for dirty jobs- old Land Rover?
Porsche Panamera S Sport Turismo for grocery-getter, family hauler, and road-trip missile
Porsche 718 Cayman S for personal daily driver
Volkswagen Golf R for wife's daily driver (basically an update of her current R32-based Audi A3)
Some type of burly pickup for hauling weekend toys
Sports car: Porsche 911 C4, since the budget wouldn't support my tastes in something a bit flashier, not with four cars to put on the list.
Luxury/Touring: Rolls-Royce Phantom, late model, low mileage
Daily Driver: Mercedes E-Class
Utility: Land Rover Defender 110 or a Land Cruiser
