Simply put the taller entry and exit height of the CUV makes them more practical than a wagon or sedan. Hatchbacks are more practical than sedans and lifted hatchbacks and "wagons" (which is really all that CUVs are) are more practical than low slung versions, as there is the ease of ingress/egress to consider, plus a more upright seating position that makes being in them more comfortable front and back. So the CUV/small SUV has taken over for all three segments: sedans, hatchbacks AND wagons, as the more practical alternative, without really any fuel mileage penalty. Most people don't care about driving dynamics, so the minimal loss in dynamics that the taller CUV has over a sedan isn't an issue.
My son's CR-V feels just like an Accord at street legal speeds, but has the Accord beat quite a bit in practicality, especially for carrying real people AND a car seat in the rear. And there's barely any fuel mileage penalty for it vs the Accord. The CR-V replaced a BMW 3 series wagon as the family hauler and is vastly more practical.
