My 2018 Buick TourX only requires the simple lever-pull-and-fold maneuver you're talking about in order to fold flat. No idea other wagons/hatchbacks had extra steps.

with my nissan xterra to fold the rear seat down you need to completely remove the seat bottom

The Porsche 911 since 1965 has two indents they call 'seats'. The set backs can be dropped to form a flat surface. Not sure what year head rests were introduced but they would hit the back of the front seats if not removed.
