I think it has to do more with the perception of safety being equated to "feeling in control" more than anything. People feel "safer" in a car that they are driving even though it's been proven beyond any trace of doubt that your odds of dying are almost infinitely higher.

In a plane, you are sitting there while a pair of [out of sight] pilots have your lives in their hands. The fact that THEIR lives are also at stake is usually lost on these people. Once emotion has taken over the brain, no amount of logical reasoning will ever get through to them.
