Default Boise/Meridian/Nampa/etc education questions

I've got family in the Boise area and visit quite often, so I'm somewhat familiar with the area's issues and wonders already, but I have some very specific questions to ask. I don't want to ask family because one side will just say all the schools are good enough, and the other will jump all over us to put in for Liberty or another charter.

I have a sophomore who is set up for dual enrollment and possibly to graduate high school and junior college at the same time (a friend's daughter did this last year). Husband has an opportunity for a transfer to Boise, and would like to live in the valley near his family and on the flatlands under the open sky. The rest of us don't particularly want to leave where we are, but I have felt for years that Boise will happen at some point.

So:

Do any of the schools there do a serious dual enrollment program? What about forensics or debate teams, Mathletes, scholastic teams, etc.? What kinds of unexpected or unusual math/science/academic programs or opportunities might my son have there? Any German courses offered outside of Boise proper? These are some of the things he's interested in, and he's had some good opportunities here in these areas.

And a final question, in case anyone happens to know: Are there opportunities for learning/service/apprenticeships/jobs at the Falconry Center? He's fascinated by falconry.

This move, should it happen, would be hardest on him, so I'm just trying to see whether there is enough good for him to grab onto. He's pretty adaptable, but it would be very hard on him to move to, say, Melba or Kuna, where he'd lose all the opportunities he's got here.
