Great thread! Many of the ones mentioned were among my favorites, especially the Edward Eager books.

There was an oversized light green covered book. It started "I went for a walk and what did I see. I saw a house, I saw a barn and I saw a tree." I remember my father reading this me often. It was part of a series of books as I remember there was another with an light orange/yellow cover and I think a 3rd one with light blue-grey cover but I don't remember anything else.
