Call the Boulder Chamber of Commerce. They have space in their building (or used to) and also know every place that does.

Aside from the hotels, the library has some nice options. I know they are doing some type of construction right now but they are still taking reservations, I think.

I have had meetings at the Y and the Boulder Museum of Contemporary Art, both great. (Also been to a wedding at the museum, pretty.) There are some other spaces listed here too.
