Thanks for all the responses so far guys...
What in the world is a Beef on Weck?
We're coming in late February, as we want to embrace the cold weather of Buffalo, and avoid tourists (even though we are tourists, LOL)
Our main objective on this trip is to get some really, really good wings. While I appreciate the recommendation for the cheesesteaks, all of us guys live within 2 hours of Philly, so when we have a cheeseteak craving, we make a pilgrimmage to Jim's!!!
So far, we have 2 things on the agenda for the Buffalo trip: Anchor Bar, and Pearl Street Brewpub. Is there a place where we can get "all you can eat" wings? Also, any good suggestions for a good local sports pub to watch whatever games are on?

A good sports bar with great wings is Duff's on Southwestern Blvd. Hope you're (all) Sabres fans.
Besides a weekend of drinking & doing the wing thing, what else do you have planned? The Buffalo Zoo has a brand new rain forest exhibit. I haven't been yet, but I heard it's facinating for any age.
If you'd like a break from wings, the casino in Niagara Falls (USA) has an awesome buffet. It's a little pricey, but the food is great and it's all you can eat. Crab legs, etc. You don't have to gamble to go to the buffet.

OK a Beef on Weck has been added to the official agenda. What's a good place to grab one? How's Ulrich's Tavern?
The main point of this trip is to sample the local foods, so I'm not sure we'll get to the Falls...

As a lover of old buildings and architecture, I would LOVE to spend Saturday afternoon walking around a few neighborhoods where I might find this sort of thing. Are there any residential neighborhoods within walking distance of Downtown that have a historic rowhouse/brownstone feel to it?

To elaborate, beef on weck is a hot roast beef sandwhich on a hard roll. The top of the hard roll is covered in salt and caraway (rye) seeds. Its good. Ulrich's has great beef on weck, and Anthony Bourdain from the food network or travel channel or something like that was there earlier this week. I agree with FedUpWNY, Duff's on Southwestern Boulevard in Orchard Park is a nice, large sports bar, lots of TV's, with what I consider to be the best wings....but you can't pass up the Anchor.
Similar to a previous poster, I highly suggest Jim's Steak Out after a night out. They have chicken finger subs that are out of this world, plus they are located throughout the city and open until 5am, bars close at 4am. Or try the Diavlo, its a steak sub cooked with cheese and really hot peppers. My mouth just watered a little bit.
If the Bandits are in town that weekend, you can catch a lacrosse game pretty cheap and check out the home of the Sabres (they share an arena)

It will be a long walk, but walk down Delaware Avenue, its also called Millionaire's row because of all of the mansions on the street from the olden days. Most are businesses now. To see neighborhoods, you will have to take a small drive out of downtown and head to Elmwood Village (which i suggest seeing anyway), Lincoln Parkway, Ashland Avenue....all nice, big older homes. Or you can check out North Buffalo off of Main Street - Norris Ave, Depew Ave, as examples if you want to google. Other than converted loft spaces, apartments, and the waterfront housing you wont see much individual housing donwtown. Check out the inner harbour (downtown near the arena) they just overhauled the whole thing and there are two battleships and a nuclear sub anchored there that can be toured.

In that case, the Blackthorn in South Buffalo makes a great burger!  It's not the "party hardy" place, for a nice sit-down though, it's kind of quiet, but you can't beat the food.

Try Downtown Main Street Near The Medical Corridor...really cool archictecture AND Delaware Avenue near North St and head towards Virginia St
