For kids, I think Waldameer park on Presque Isle in Erie might be the best place.

Chautauqua lake is very nice, no big resorts but plenty of rentals available and there is a small amusement park on the lake (Midway, now owned by the state). A good place to take kids in this area too is Panama Rocks.

Allegany state park on Red House lake is nice, just rustic stuff and nice bike trails around the lake.

I forgot to mention Peak n Peek in Findley lake... the resort is not on the lake but nearby. This is probably the best resort in the area, caters to families, great golfing, indoor swimming and mini golf for kids.

I would recommend Allegany too. Could also try Olcott.

Don't waste the time at Darien Park unless you really want to spend money.... but you can go to the Darien STATE Park there as well ( if it is open). Allegheny is wonderful and so is Letchworth -- again, if the governor doesn't close Allegheny. I bet you can find lots of places in the Finger lakes.
