Pretty much anything to do with aging baby boomers ... which is why I chose a healthcare career.
Granted ... it won't make me rich but, I'll be able to retire comfortably.

To be absolutely honest, I can't think of any legitimate ventures. With the current atmosphere, I would rule out stocks and shares. Sticking the money in a high interest bank account may be cheating, or is it? The trick is to watch the bank you invest in and if anything happened you have to act to get your money out. Doing all manner of small income gains and banking it will get you a lot in the future.

dentistry, veterinarians, own your own business in something else (fence company or other home improvement business) - as the economy gets bad, people "nest or cocoon" and fix up their houses and obviously healthcare is always good. and veterinarians have always done well and people love their pets (at least most).

This is the best advice. Invest in yourself, both in terms of your own education (including self-directed study) and your own business. Only high taxation, like in most of Europe, could close that avenue.
Otherwise you have to rise to the top at some corporation or government bureaucracy (set to proliferate).
You could also visit the Department of Labor website, it should have sections on the outlook for various occupations.

Actually, that business is WAY down with the recession ... those businesses do well during the boom cycles, not the down cycles.
When people are losing their homes in large numbers, they tend NOT to fix them up.
