My husband and are in the beginning phase of working out a business plan which we believe will work well for us.
I'd like to hire a consultant whose expertise is determining the demand for, along with the feasibility of, our idea. I am almost certain that the demand is there, but I'd like to look into the best way to tap into the customer base and where the demand would be the highest.
What type of consultant is this and how do I find a quality professional?
Hard to say, there are consultants in every type of industry. There are also professional trade groups for many industries, and if you belong, you may have access to tons of data and be able to get references for consultants. You may want to contact SCORE and see if they can give you some direction.

Look at the SBA. That's the US Government Small Business Administration. They have a web site. I would start there.
Local colleges often have a class for small business owners. Good way to meet people and get ideas. Ideas of what to do and what not to do.
Local government may have a person who handles development. Ask.
Ask your local banker if you know one or two. May be good as a sounding board.
Be careful with consultants. I have known a few... Most successful small business owners have very good instincts.
