Even high-end restaurants take a hit when the economy turns sour. That's why The Palm, a steakhouse inside the Swissotel Chicago at 323 E. Wacker Dr., has cut some prices. A $300 bottle of Joseph Phelps Vineyards Insignia Napa Valley wine, for instance, now can be had on a Wednesday for $150.

Im sorry but that is not a deal.

Yes is it a deal on the Insignia...of course! But only a very very small percentage of people even can afford that. They would do better to offer value through the many wines on their list to under 100 dollars, no 200-300% mark up (yes, I have seen that) most people feel comfy with ordering a quality bottle for between 40-70 dollars.

And dont do that without adding some value to your menu.
You dont need buzzword foods like Foie or Caviar to have elegance.

Just a humble chefs opinion

I am still seeing a $50 bottle of Grey Goose being sold at $300-500 dollars at clubs... apparently nobody told the kids there is a recession... a lot of people aren't cutting prices... Someone should tell the clubs, the drunker you get, the more likely you'll spend more on alcohol... but there are problems with that as well.. Maybe the club should also get into the taxi business as well...
