I drove from South San Francisco to Watsonville via Highway 1 once as a detour on my way to Morgan Hill. That's about as much of the coastal part of 1 as I can take.
Also, I would highly recommend starting on the Great Highway and continuing southbound on 35 (Skyline Boulevard), and then follow the signs to 1, rather than taking 1 out of San Francisco. Skyline is a very, very pretty drive.

I love the drive, have done it many times. But you need to make lots of stops along the way. Check out the Phoenix Shop at Nepenthe for a fun shopping experience.

San Luis Obispo
SLO is a great little town halfway to LA. There are lots of hotels and restaurants, and a charming downtown area to enjoy. Further down the road, Arroyo Grande is nice too.
We took a ride up to Santa Cruz from Hearst Castle a few months ago, and it took about 5/6 hours, stopping for pictures and the Phoenix shop. Coming down, if you plan your day right (leave early), you can maybe make the last tour at Hearst before closing, then stop at the rock before SLO. From SLO/Pismo it's about 6 hrs to LA.
Hwy 1 through Big Sur is a lot better than it used to be, but it is rather winding. You might want to bring some dramamine, ginger or whatever.

Hwy 1 thru Big Sur is a beautiful but scarry drive. Those clifts are, well... if you are afraid of heights or frighten easy, I wouldn't drive it. I have driven it twice in my life and I think I am done.
If you do make it to Big Sur, stop and have lunch at the Lucia Lodge. It's very quaint and the staff reminds me of the 1960's. Lunch was excellent. The cabins available are awesome, one is all the way out at the end of the point. Unbelievable views and romantic.
