Mapquest is offering 3 different routes to get to Disneyland but all go through LA. The shortest route says 3 hours 30 mins.. The longest route says 4 hrs 15 minutes. How much more time should we add on for traffic?

If we leave the house in SLO at 7am, what time should we plan on arriving at Disneyland?

It's really hard to predict, since traffic in SoCal is heavy, but a traffic accident can really back things up. I would suggest driving down the evening before, staying at a hotel close to Disneyland and drive to Disneyland in the morning (if this is an option).

Leaving SLO at 7:00 in the morning will mean that you'll go through Santa Barbara during rush hour. By the time you hit Ventura and points south, rush hour will be mostly over. Baring accidents and getting through SB quickly, 3.5-4 hours sounds reasonable.

Due to commitment/engagements the day before, that won't be an option unfortunately.

Looks like the pacific coast highway is the fastest route.. Do u think there is a better way to go in order to avoid Santa Barbara?

Re: avoiding S.B. . . . No expedient way to avoid it, but if you go over San Marcos Pass, you'll miss Goleta and half of Santa Barbara. PCH south of Oxnard is an idea worth considering. Beautiful drive and you'll miss the San Fernando/Hollywood/Central L.A. traffic. But then again, by the time you get to the S.F.V., the worst of the rush hour should be over, (again, baring accidents).

Edited to add: Have you considered taking the train?

If you have a smartphone or computer, go to Google Maps, turn on live traffic and enter destination. You will see a real-time ETA because none of us know if there is an accident along the normal route etc... welcome to 2015
