Me and my wife just drove up to SLO to look around and I was joking about there not being a Target. We got some candy at one in Santa Maria though.
Anyhow, I found SLO to be like Santa Barbara. In many ways I liked it more than Santa Barbara but its rather small and fairly isolated. With gas so high it makes it that much worse.

Between Paso Robles, Atascadero, San Luis Obispo, Pismo Beach, and Santa Maria there is enough to do.
-Paso Robles-water park, the fair (only a couple months in summer), batting cages and skating rink(for kids)
-Atascadero-zoo, super wal-mart to be built (if u like the cheap prices at super wal-mart)
-san luis obispo-downtown offers a variety of shopping choices such as urban outfitters, sports authority, barnes n nobles, and a possible future macy's. a drive-in theater. a fancy, modern-day, and a foreign movie cinema in downtown. the grad, the big popular night club also in downtown
-pismo beach-outlet mall next to the freeway, the dunes right along the beach, the best arcade at the boardwalk, and the old fashioned bowling alley in downtown
-santa maria-enclosed mall w/ laser tag, 12 screen theater, arcade, and big food court, but low on good stores right now. let's not forget the santa maria speedway, edwards cinema theater, and Boomers amusement park.
Not to mention you are only 2 hours from Fresno and the good malls there and the small theme park there.

The Wal-Mart in Atascadero may never get built.
And what is it with you and malls? You don't need enclosed malls around here since the weather is great year round.

Its not just the central coast that doesn't need enclosed malls. The Central Valley is the same way.
The 2 more upscale shopping areas in Fresno are not enclosed:

And 2 of the 3 enclosed malls in Fresno have also added popular outdoor shopping areas:

i think that Super Wal-Mart is going to be built...the EIR is going through and I think the "shield initiative" will not go through. that city is desperate for tax revenue and for avoiding bankruptcy, they will take anyway out now...
Malls are entertainment and offer a variety of stores...
Sorry you dont consider them fun.

I moved from Thousand Oaks to San Luis Obispo, Thousand Oaks and San Luis Obispo both have control freaks running the cities who are anti business, just try finding a drive through restaurant in San Luis Obispo, but it is safe like Thousand Oaks. Since you are from Thousand Oaks you are already use to outrages rents, expect the same in the S.L.O. area, with gas in SLO like many other things are higher than Thousand Oaks including utilities, if you are working as a retail manager, don't be to surprise if your wallet is empty after paying all the bills are a little short. In the long run, there are more higher income opportunities in Thousand Oaks than S.L.O. in the event you should lose your job. Most jobs outside of government are very low paying. One tip: Try to make the move long before the college students return, as rent goes up as vacancies are filled up.
San Luis Obispo is a nice town if you can afford it and allot more fun for a 25 year old female than Thousand Oaks. I ended up returning to Thousand Oaks after a couple of years because the money is allot easier to come by in the Conejo Valley, like the person in Victorville; I regretted leaving S.L.O.because I enjoyed it so much.

Also, San Luis Obispo is in a suburban area like Thousand Oaks. It's actually one of the 2 only small suburbs in California. Humboldt Bay (eureka area) being the other one. But, statistics say in 2050 north county (paso robles area) will be a suburb.
Only thing is San Luis Obispo isn't a metro area, so you will be confined to the county and Santa Maria.
