This is the West, we don't much care about ethnic background, unless you are a Mexican of course.

Well, some peopel think the various European ethnic groups are kind of neat. However, the politically correct thing to do is insist they are all white, are of the same ethnic background, and European groups are disqualified from contributing to the diversity quotient of an area.

People coming into the Gold Country and Sacramento Valley generally assimilated with one another fairly rapidly. There were a few Gold Rush towns made up of a dominant ethnic group, but none that were really ethnic towns, like Kingsburg (Swedes) or Gustine (Portuguese). There were a few Asian neighbourhoods in Sacramento, but the local government at the time did everything possible to harass and disperse them, up to having the I-5 alignment run through a fair share of the area they lived in.

I haven't read much about ethnic groups in Chico, other than a group of Chinese, which were run out of town. The Diamond Match Company hired a significant amount of one European ethnic group, but I can't remember what the group was.

As far as Italians, I haven't heard a word about them as a group in the Sacramento Valley.

There are Italians everywhere. Chico would not be the exception. Italian-Americans, I should say.
