When I was very little, my mother was firmly convinced that camping meant you ate cheap hot dogs and canned pork and beans. So that was what we ate on every camping trip.

I'd have to sit there choking down nasty cheap food while I could smell all the steaks and chicken grilling in all the other campsites. I swore that when I grew up, I would never eat cheap hotdogs and canned pork and beans again.

Now that I am an adult, my family indulges ourselves while camping. We eat extremely well, but also very easy to prepare so there is not a lot of clean-up.

So, what is your favorite food to take camping?

Filet mignon - a small portion goes a long way. Marinated in teriyaki sauce for additional flavor. Served with boiled new potatoes and Caesar salad.

Same as above, but substitute tuna steaks marinated in Italian dressing.

Shrimp tacos.

Stir fry - we have a small wok that lives in our camper van.

Beans and hotdogs. (Sorry, I like 'em. )

Steaks of whatever sort. I likea meat in a tube too. Brats and hot dogs are also campsite fare. Bacon is used quite a bit. Not only for flavor but for fat to cook on cast iron Dutch ovens and cast iron skillet are used. I love cooking over a food fire. With oak it is awesome.

gosh...the list is endless. If you have a cast iron dutch oven you can make just about anything that you make in the oven,

Shrimp wrapped in bacon, of course burgers, goulash, baked spaghetti, campfire hash.

Google campfire cooking and you'll find all kinds of recipes. we've even wrapped a whole seasoned chicken in foilm throw it in the fire for a while.

example..take a potato...slice it thin without cutting all the way thru. place a slice of onion and seasoning in every crevice. wrap it in foil and throw it in the fire. In about a half hour you've got a tasty potato.

A baked potato never tastes better than when it's wrapped in foil with butter and cooked in the coals. But it's tricky to get it right. To make it easier to time I cheat and stick it in the mikcrowave at home for a few minutes, that way you are not trying to cook a raw potato evenly in an uneven place such as a bed of coals.

We usually do steak too but other good items include a tandori chicken I learned years ago. You mix plain yogurt with garlic, lemon juice and assorted spices (or you could just use curry). Throw them all in a giant zip lock bag, double bagged for safety, and allow it to marinate as it sits in the cooler. The leftovers make great sandwiches.

We eat all kinds of delicious stuff, but cheap hot dogs and canned pork and beans always go along too. What's a camping trip without at least one meal of burnt-to-a-crisp hot dogs cooked on a stick and covered with ashes and mustard?

We always like to use the Dutch oven, and practice making stew with dumplings, cinnamon bread, caramel pecan rolls, and nothing beats fresh caught fish...but I bring salmon in case those big ones get away.

This summer I am planning on getting some fishing in, trout caught and coooked up over a bed of coals. Filled with some herbs and lemon slices.

If we're car/truck camping or using the TT we eat the same as if we were at home, if backpacking then it's mostly freeze dried foods.
