I am driving my RV from CT down to Florida for the Daytona 500 in February. Trying to plan my route with cool places to stay along the drive. I am looking for non-traditional places to park my RV overnight. Please do no suggest the Walmart parking lot idea. Thanks in advance!

How many weeks are you planning to spend on the road?
How far from the straight down I-95 route are you willing to meander?

Hartford to Daytona is about 18 hours at the wheel (per google).
With a backup driver and a couple naps that's a 24 hour trip.

I'd think about utilitarian and safe places that are NEAR interesting places to visit.
If you don't have a toad then rent a car (Enterprise delivers and will sometimes do RV parking)

South of the Border is a huge tourist trap a few miles into SC from NC. But they do have a pretty good restaurant and interesting shops. The RV park is nice and reasonable and it'd make a nice overnight stop and safe place to stretch your legs.

In Florida there's a wonderful State Park about 15 miles off the Interstate. If you reserve in advance you might even get a spot in the ocean front campground. It's Fort Clinch and you can reserve through reserveamerica. Also, if you're not parking in the infield at the race, I suggest Blue Springs State Park south of Deland. It's probably 25, or so, miles from the racetrack. In February there will be lots of manatees to see.

I use this site (there are several similar)
Free Campgrounds for RVs

In small rural towns, I stay in City Park or Fairgrounds. (often they are free and some have hookups)

In a pinch... I use Hospitals, Funeral homes, Churches, farm yards.

I will go to a farm store about closing and meet someone who will often let me stay for free on their farm.

Typically I use Hospitality guest homes for travel ($10/ night worldwide). Many are farms and let you stay for free in RV. I have done this often on East coast States (even more often in New England).

Since I burn free cooking oil for fuel... my biggest expense is food (I usually get surplus veggies / fruit / dairy from Grocer discards). Just show up about 7AM and ask.

About 10 miles north of Daytona is Gamble Rogers State Park, nice place to stay if they arent already booked up.
Welcome to Florida State Parks

I'd imagine most campsite north of Florida/Georgia would be closed in February
