I know there probably isn't a bad place in Canada for outdoor sports, but what other areas besides Vancouver are great for hiking, mountain biking and beginner to intermediate kayaking - no rough conditions. Maybe throw in some relatively easy mountains for climbing.
And on a slight side note, am I correct in presuming Vancouver and Toronto are the most expensive cities in Canada for living costs?
I seem to remember someone once saying Quebec City feels the most European of Canadian cities. Is that true or am I confusing it with somewhere else? Can one get by there knowing minimal French?

Yes, it is almost certainly Quebec City they were referring to.
Getting by with no French there? As a tourist - yes. As a resident - much more difficult.

That is true that it's the most European of the Canadian cities, but you can't get by with minimal French. It's much more homogeneously Francophone than, say, Montreal or Gatineau, so it'd be doable for a vacation, but for actually living you'd have a hard time, fairly low rates of bilingualism. Like Acajack said, Ottawa's a decent option and you can get by with minimal French in Ottawa.
And Ottawa is about halfway between Quebec City and Toronto, only about 5 hours drive from both so perhaps a good option for someone who needs to explore places in more depth.
Out of those cities listed for good outdoorsy activities, which would you think would be best for trying to start a photography studio? I know it's a tougher market in Canada in general than the US.

Ottawa is also two hours from Montreal which is an amazing city in its own right.
Ottawa is also much less expensive cost-of-living wise than either Vancouver or Toronto.
Is Montreal more bilingual or mostly French speaking?
It is primarily French-speaking but it has large anglo minority.
Whether or not it is a totally functioning bilingual city is a matter of debate, but certainly an anglo who speaks no French living there could get by in most situations, but life would be a lot easier (and happier too) if he or she learned at least some French.
