Newfoundland is not very multicultural at all outside St. John's, but the city is getting more diverse in many ways - especially with MUN. While it's not quite there yet, I think it's getting better. St. John's is a decent choice. Small city but a very unique one.

Labrador has always interested me... I know very little about it and I don't ever recall it coming up in conversation.

Stoke. There was a recent incident where a doctor from Maine USA was attacked by a polar bear in the Tongat Mountains in the far north of Labrador. They were camping without an armed native guide present and the bear crossed a bear proof electric fence and mauled the guy.

OP - Let us know what is happening, please.
