I think I'm just confused by this motion. Hate speech laws already exist in Canada and have since the start. This goes for defaming anyone who belongs to any religion. And I don't believe this motion is about not criticizing the religion of Islam because that would go against freedom of speech. So my take is this means stricter punishments for Islamophobia compared to hate against other religions? I can see a lot of potential lawsuits on the horizon if this were the case case.

It does not mean stricter punishments. These motions are not laws.

Jewish Canadians is the most targeted religious group in hate crimes (in absolute numbers). And the number of Jews in Canada is much less than muslims. And yet they pass this motion...

It's the soft bigotry of low expectations that Maajid Nawaz talks about. As a Muslim, he's offended that Canadians think Muslims are inferior to Jews to such a degree that they need special protection from criticism that Jews are strong enough to handle.
