Just for the sake of clarity; Rooting or jailbreaking a phone is about getting super admin access to the operating system on the phone (to add or remove software, or change features of the software), and has nothing to do with unlocking a phone.

Sim or Carrier Unlocking is about removing the carrier lock that prevents the phone from being used on a different network.
