I am a new smartphone user. Actually I don't use my phone much so while I don't feel like I'm a tech idiot generally I am certainly not savvy with smartphones nor will I ever be an in depth user.

I bought a used AT&T Galaxy Note 2 which comes pre loaded with a ton of icons.
I'm ok with with using some of whats on there like YP and Flipboard for now, but there has got to be a way to hide some of these other icons or delete some of these things?
I have not downloaded much new, FB, a couple of brain games, maybe a radio player or podcast manager in the future. I'm sure there will be some more. The more I download the more cluttered the app thing becomes.
Its hard to find what I use in all the stuff I dont.
Is there a way to have a less cluttered look?

You can go to Settings and manage applications. Uninstall what you can. Disable the rest so you at least don't have to see it.

Which "app thingy" are you referring to, the home screen or the app drawer?

You can hide them in certain launchers, like Action Launcher (which I currently use):

You mean the apps on your desktop screens? If so, just hold your finger on a unwanted icon, and slide it up into the trash can, it will disappear and end up in the app tray with all the others you don't want on your screens. You can also permanently delete some of them by going to apps manager, but not the built in apps your carrier or manufacturer installs.

You can also put them into folders. If you touch-hold an icon and then drop it onto another icon, you'll get a folder with those two icons. You can then move more icons into the folder.

Yes folders are a option also. Another way of organizing your icons... Long press on a icon, drag it towards the very edge of the screen, (left or right edge) and the display will flip to the next screen over where you can let go and "drop" the icon on any screen you want. This way you can put all of your related icons on the same screen. You can even long press a icon, and move it around with your finger within the same page and drop it where you want so the icons are in a certain order on the same desktop, but I don't think you can do that on older phones.

And if you want a app icon that's in your app tray, (this is where ALL your apps are stored) and you want one or more of them on one of your desktop screens, again, long press on a icon, and your desktop will pop up. Keep your finger pressed on the icon and either drop it on the first screen that shows, or keep your finger on it, slide it towards either edge of the screen (which again, makes your display flip to the next screen) and drop it on any screen you want.
