Like I said, cooking them the right way is. There's a lot more than water that goes into the pot.

Sigh. I'll have my crawfish when I go home in May.

I too am allergic to seafood so I can appreciate where you are coming from.
Like OTC said, ask the guys at Sellsfish if they could cook you a batch, it maybe possible for you to get your fix.

How does one eat a crawfish? I'm a seafood junkie but a New England seafood junkie (Maine steamers, lobster, scallops). Although I do love me some fried oysters. I wouldn't know what to do with a crawfish!

Break it in half and suck out the guts and brains. I've never done it myself.

It is basically a tiny lobster, most people just eat the tails, some suck the heads too....

As stated...

Pull the tail off the body. Take the head and suck all the juice out. This part is better than the meat you'll be eating in the tail. Once the head is "de-juced" you can focus on the tail meat. Holding the tail near the bottom you can pinch it to help release the meat. Sometimes you can just bite the meat and pull it right out of the shell. Sometimes there isn't enough meat showing to get a grip with your teeth. In this instance you can peel the first little piece of shell off then proceed to pinch and pull.

Don't pass up on sucking the head. That really is where the best flavor comes from.

Do I de-vain the tail like a lobster? I'm assuming there is not any meat in their tiny claws worth digging for? Do you eat it with butter or add any spices?

Nothing to de-vein. I've never eaten any with butter. The roaches are cooked in plenty of spice. Nothing additional needed.
