Also it depends on the tense, so "I'll bring something to the party" is technically correct if the event is in the future.
It depends on whom you are talking to. If you are talking to the host, you use bring. If you are talking to someone who will be also going to the party, you say take.

Yes, I know. I'm taking a dessert.
I'm having a party.
