Probably the real BBQ ribs purists would not agree, but i think the ribs at the Sticky Fingers restaurants are pretty good...We've been to the one in downtown Charleston and the one in North Myrtle Beach and never been disappointed .
After having the pleasure of eating ribs at Central BBQ in Memphis, Sticky Fingers just doesn't do it for me. I think their ribs are too tough. I wonder if the increased cost of beef has something to with the lack of beef ribs here?

It's more of an issue of beef not being traditional barbecue than an issue of price. That would be my first guess.
I know you won't find beef in any traditional barbecue spots that I know of in North or South Carolina. The only exceptions I have seen (a scant few...all in the Lowcountry) absolutely ruin the beef. They are all better off sticking to pork.
