My family is planning to relocate to Mount Pleasant this summer. Our son will be starting 3rd grade. We are trying to decide where to rent or buy and much of our decision comes down to schools.
Does anyone have any information/thoughts/opinions about the new school opening, Carolina Bay vs Charles Pinckney?

I also am hoping to get a teaching job so not only am I interested for my son but for me too! =)

Do you mean Carolina Park?
I so that's where my kids are going and I'm pretty excited about it.
I've never heard anybody complain about any particular school in Mount Pleasant.

For a third vote along the same lines, Mt Pleasant has a reputation for good schools across the board. There's no reason to think Carolina Park Elementary will be any different.

Many of the Laurel Hill teachers will be heading to the new school as well as the current principal. Mike Antonelli is a great administrator and a genuinely good man. He'll be sorely missed, but a great add for Carolina Park. The school should do well. I would find the house that works best for you. Either school will be fine.

Any thoughts on how hard it may be to get a teaching job at CP?

I could be wrong, but I think they're already staffed up for the new school year. However the school is built for 900 students but they're only opening for 500 as of now. It's also expandable to 1200. So eventually they'll need to hire some more teachers or back fill their other positions from other schools they came from.
