Most of the popular choices are gussied up spots that are more show than anything. I've not been to one of these spots and had decent sushi yet...but you're sure to be in the "IN" crowd if you go for sushi there.
Sushi Hiru in Mt. Pleasant isn't bad at all...but like everywhere else in the area, it's pricey.
Before coming to Charleston I was used to getting a sashimi meal with 25-30 pieces of fish for $24. I've yet to find anyone that serves more than half that fish (and they tend to charge around the $21 mark for that quantity). But that's Charleston...
I posted on this last week- we ended up going to Bambu in Mt Pleasant. It was very good, a tiny bit pricey but we could have ordered cheaper and still left satisfied. What made the night a big winner was the sake selection- over 10 different types, which is the most we've seen on a menu (coming from NYC and was really spoiled there- we had 7 sushi places within a half mile of us there). I don't think you can go wrong with Bambu unless you're used to much cheaper prices.
Bamboo is awesome, but I only like the sushi. The sake is YUMMMY!!! I love the Fisher Roll and the Scam Roll. We did drop a bundle when we went but we had drinks and about 6 different specialty rolls and appetizers.
It was my husbands birthday so we went a little nuts. I can't wait to go again.

I thought the rolls were very good. We didn't try any sashimi though. With Charleston being such a big seafood place, you'd think it would be easy to have really good cuts of fresh fish...
