Tom a UDS is one kick ass smoker that you can build for less than $100 (sometimes MUCH less).
The idea is to use a 55 gallon drum (food safe...nothing else will do) and put a simple coal/wood basket in the bottom with one or two racks above for cooking. Most models will have three or so quarter turn valves around the bottom of the barrel to allow air in. With the valves you can regulate the air to just allow the fire to slowly burn. I've heard of people getting 20+ hours off one single basket of fuel. Now THAT'S efficient smoking.
