It appears you're looking at an old score. That looks to be from last year. If you go to that link you've given, it looks like their most recent scores for the year have all been in the 90's. I actually don't pay much attention to those scores, because if you look at the history of a resturant's scores, you'll see most score high some times and then low at other times. But I have friends who live and die by those scores, so I understand where you're coming from. Personally, I love Ru San and would recommend it to anyone.

Ru San's repeatedly got scores in the 70s and 80s for repeat infractions, such as NOT WASHING HANDS, dropping food on the floor and then serving it. They were also cited for leaving rice in the rice cooker overnight and just turned it on and were going to serve it (again this was done in fron of the inspector). And there two most recent were like 91 and 93. Not very good for a place that serves raw fish. The one I posted was from November 2006. And this was a violation on the repeat inspection:
ONLY APPROVED FROZEN FISH CAN BE USED FOR SUSHI. SAW STAFF CUTTING UP FRESH SALMON TO USE FOR SUSHI.
GROSS!!!!!!! This means they bought it at who knows where, it was never frozen (as sushi needs to be to kill bacteria) and served it. No thank you.
Food safety is important to me because I work for a major foodservice company and all of are chefs have to take Serv Safe (which gets you an extra 2 points). Almost all of our cafes in NC have scores in the high 90s and I have never seen one in the 80s.

I just came back from Jade and so far it's been the best. I took the menu from my favorite sushi restaurant in CA and had them make the same rolls. Turned out great!
Check out the rolls from this restaurant....this is what I was looking for and am thankful that Jade can make the same rolls since they have most of the ingredients.

Sushi by the lake in Cornelius was good. Kobe in Cornelius was pretty poor.
I miss going to Japan for business and getting to eat high $$ sushi on the company.

The best sushi and Japanese place in charlotte, by far, is Mai on Colony rd, at the Rea Rd intersectio. Mai Japanese Restaurant

There are lots of sushi places in town. Every Japanese sushi chef in town claims that their sushi is the best. So, buy a pack at Harris Teeter and let them fight it out themselves.

If you are looking for authentic Sushi I would not recommend Sushi 101, just a warning. Their drink specials are awesome tho
