No worries about igniting chains. Most upscale malls attract chains, especially the big, fancy shmancy ones like Cheesecake Factory. But there are some gems over there. Baoding comes to mind. Been there forever. Also, Rooster's, Toscana, Zebra, Maki, Village Tavern (don't recommend, just sayin') come to mind. If you look hard enough, you can avoid the chains like plague like I do!

Village Tavern is a small chain. There are 10 locations in six states.
There is writing on their walls that says "housemade pasta". But their takeout bags say "proudly serving Barilla pasta".
I love Mama Ricotta's! Great place to eat and you don't have to wait for an hour.
Maggiano's...my SO and I went there just a few weeks ago and when he asked about a certain dish, the waitress said it was premade and frozen.
We also went to Mama Ricotta's that same weekend and it was great. The waiters were wonderful too. Apparently the boss hangs out and keeps an eye on what they do, so it's all or nothing.
Visited Maggiano's in Belleview for the first time last Sunday 5 Oct 14). Absolutely the best Italian food. I'm including New York restaurants in this comment. Pasta doesn't get any better than this. Sauces awesome. Eggplant Parmesan was to die for. Ditto for Lasagna.
