My wife is planning on transferring to UNC-C and we plan on taking a few days to look around the surrounding areas this summer. However, we are having an issue with where to look for a house. We know we don't want to live within Charlotte, but after that we start to disagree a bit. I want somewhere in the country, and away from people and the busyness. However, she likes the convenience of having a store around the corner if we need groceries or whatever and of course close enough to the school.
So, I'm wondering if there would be anywhere specific to look that would fit the bill for "rural, but still very close to civilization?"

Definitely look at Mint Hill, especially where it borders Cabarrus County, and just into Cabarrus County at Harrisburg and Midland.
These areas are very convenient to UNCC and nicely rural

Look at Harrisburg first. It's right down the road from UNCC.
