Beginner Bike Routes? (Mint Hill area)
Looking for a beginner cycling route somewhere close-ish to the Mint Hill area. Anyone have any suggestions? I need some extra seat time outside of training to get more comfortable with my bike.

How about biking through some of the larger neighborhoods? Start off of Lawyers Rd (across from Danbrooke Park) and enter the Farmwood subdivision. Chart a route that takes you all up and down those long streets. Study the map of that area and you'd have a lot of road to cover in without being out in traffic

Go to BeginnerTriathlete.com - Triathlon Training for Beginners and find their route creator/listing page. There are dozens upon dozens of good routes on there. Each listing includes mileage and elevation change as well as a difficulty rating, if I recall correctly.
Inside Out Sports on Church Street does Tuesday night rides for most levels. Might be worth checking out. Inside Out Sports - Triathlon Bikes, Triathlon Apparel, Running Shoes - Cervelo, Kuota, Blue Seventy & More They're nice people to deal with. Highly recommended shop.

If you're truly a total beginner to on-street riding, find a good large business park on a Saturday or Sunday and start there. I did that when I started riding, at Ballantyne Corporate Park. Low traffic, wide lanes, etc. Also good to work on skill drills in those sorts of areas, no matter your level.
Once you get more experience under your belt, call up the bike shops and see if they have any rides/routes for beginners.
