You could rent a car & drive west on Wilkinson Blvd to Belmont. They have a nice botanical garden-Daniel Stowe Botanical Garden. They have a nice little downtown with restaurants for lunch.
Catch a shuttle into town and visit a museum or two, have a couple drinks, a meal, a nice walk through 4th ward and a shuttle back to the airport in time to check in.
I'd go to the NASCAR Museum, downtown. If you like NASCAR you will love it, if you hate NASCAR you will feel superior so you can't lose.
Then HOPE there is an afternoon baseball game, I ass/u/me they have them, the stadium is very close. If you want to chow down, there are some great (not necessarily unique) restaurants downtown. I would leave that area with about 2 1/2 hours to spare, still gives you 6 hours to explore.
I second the suggestion for seeing the NASCAR museum. I am not a NASCAR fan, yet that museum is fascinating. You will develop a healthy respect for NASCAR.
There are quite a few good restaurants and cute little parks and plazas around Uptown. It's a nice place to wander.
