The state of nutrition is in flux these days. You'll get very different recommendations from traditional nutritionists vs people who have embraced a functional medicine approach. Before spending the money on a practitioner, there are many resources available these days. A book by Terry Wahls called "The Wahls Protocol" would be a great place to start nutritionally. If your issue is body composition, you may want to check out the "Liv'in La Vida Low-Carb" podcast...
I'm not sure if you can buypass the doctors and trainers to just see the dietician, but Carolinas Weight Management is a nice place. Make sure you call the main number on this page - it took them a minute to get around the fact that I did NOT want weight loss surgery (for which you need to go to an orientation. I'll suggest that if the dietician or nutritionist wants to implement increased aerobic exercise and calorie restriction, that you seek someone else. Body composition is 80% diet, you need to get that dialed in, exercise is important for many things, but in general not weight control. There are far too many people spending hours a week on aerobic exercise for little or no benefit. Someone affiliated with a functional Dr would probably be you best bet....

Anyone who uses evidence-based approaches is "functional." "Functional medicine," as it refers to a specific type of alternative medicine, is pseudoscience.
Just because Paleo has worked for you doesn't mean it is the gold standard or even a good diet.
i think you are confused about functional medicine...eating nutritionally dense, wholefoods, and less processed crap is the basic idea...all you have to do is try it and see if it works, there really is no down side...
