Iím flying into Charlotte here in a few hours and have some time to kill before I check-in to my hotel. What are some good restaurants not from the airport, or what could I do for 1-2 hours?

It's kind of raining now, so Carolina Place Mall, Southpark Mall, and Concord Mills Mall might be your best bet based on whether you have a rental car and where your hotel is located.

Probably too late but Bad Daddy's in the airport probably isn't a bad choice. I've never eaten in the airport one but am a fan of the others.

Pinky's is a popular choice pretty close to the airport.

As far as other activities, Billy Graham Library is actually the #1 attraction in Charlotte according to TripAdvisor. Or Whitewater Center if the weather is nice.

You won't find any nice places near the airport. I would venture uptown or to Southpark.

Technically, I would even call uptown "near" the airport. It's honestly probably the same distance to much of uptown as it is to Heirloom (~15 minutes). For a good sized city and large airport, it's actually very close to the downtown/uptown area.

Fair enough. Not sure 1-2 hours is enough time for it anyway.

Not sure why people are recommending places several miles from the airport.

There's a showmars, which is a seafood chain. That's where I ate. Another time I ate at Subway which is half a mile in a plaza. U could always drive down 74 east for more options.
