I do a lot of extra curricular stuff with the kids.
Can someone tell me (if we live in Concord - Highland Creek or Huntersville)
if there is (nearby) and where:
ice skating
My Gym
The Little Gym
Other gym-like places (suh as bounce house places, etc.)
Sports for kids (do the cities do this stuff?)
etc.

I don't think there is a My Gym near there, but there is a Little Gym in Huntersville. Here's the website: The Little Gym (http://www.thelittlegym.com/gym/default.aspx?gymid=71 - broken link).

Concord Mills has a ton of places inside with things for kids to do - arcades, go-carts, I think golf, etc.

I don't live in these areas, but I would think there are organized sports teams there.

Two other places I recommend - Lazy 5 Ranch in Mooresville. It is a drive thru zoo, and it is awesome. I see you are from SE FL, so you are probably familiar with Lion Country Safari. Lazy 5 Ranch is much better. Also, a few days ago I went to Reed's Gold Mine for the first time, which is in Cabarrus County. That is an inexpensive and interesting place to take your kids. It costs $1.50 to pan for gold.

Monkey Joes, GYmboree play, Birkdale has a splash area, Northcross shopping center has pony rides every saturday in the spring, tons of parks that have monthly crafts, Pattersons farm is very cool place, Lazy 5, raceworld, The towns have lots of festivals in the summer. Huntersville is awesome for kids and safe too!
