The restaurants sponsor the gift certificates so no, they will not be unhappy - they use them as a way to promote getting new business. The thought is you will come back again once you try them out.

Note the fine print - typically, you can buy several certificates for any particular restaurant, but you can only use a certificate at the same restaurant ONE TIME a month.

It is a way of advertising w/o spending the big bucks to do expensive airwave and magazine ads . . . and restaurant owners know this is very specifically targeted to the exact demographic they want coming into their establishment.
