There's a restaurant called "Blue" (I am pretty sure that's the complete name) in uptown. They seem to have local bands that play jazz, the couple times I've been there it seemed like a college age group that was performing- there were good (IMO), the ambiance is good and the food is decent and reasonably priced. I believe the live music starts after 8:30pm or so.
I doubt if you'll see Shirley Horn or Wynton Marsalis there anytime soon but if you find yourself uptown it's a good place to hang out and have a drink and bite to eat while listening to music.

Just wanted to put out the word KCSM.org is a 24-7 Jazz, Latin Jazz & blues station near San Francisco. They stream all day and night. I'm a local tenor/soprano player and we are so lucky to have KCSM FM 91.1.
Check them out! I know they are not in Carolina but at least you can listen on the web. They are Public radio at the College of San Mateo, just south of SF.
Best,
