I do not know of any in CLT, unfortunetly, but there is a charter school in RDU area that is exactly what you are looking for. It has a shortened school day and the kids can miss school for competitions. The school is the highest rated school in the state on the NC exams. Admission is done by lottery for those who qualify. I am sure it is hard to get into like most charters. It seems like an amazing school.
From reading this thread, I am surprised there may actually be some options (other than home schooling). I would think that any school worth their salt would be the first to say that academics are far more important than athletics.
Hopefully one day she will win some gold medals and rake in the endorsement dollars.
