My wife is from East Aurora and I am from Boston and lived in Buffalo in the Gate Circle area for a few years back in the mid 90's. We had Cole's, The Gate (Gabriels' Gate - best wings), and Nino's great pizza and wings for Bill's games (Brennans had great wings as well). The wings down here are poor to average. If you could combine a good pizza and wing shop, make it sports themed, you might be on to something. There are a lot of people from Buffalo in Charlotte and I know that my wife still brings back a huge bag of Sahlen's hot dogs, Chiavetta's marinade (every time we have served this at our house people have been blown away), some kind of special chip dip, and a few other goodies she can only get in Buffalo.
Pizza and wings could do really well here, if you price the items reasonably. I would try to avoid building out or taking over an expensive and large restaurant/bar type thing. Stick to the food, with a small eat in and bar area.
