Ha!!! Well, I would swap out some of the mid-priced resturants and replace them with some of my upscale favorites like Noble, Red Rocks (the one on Providence), Bonterra, The Melting Pot, Upstream...I love resturants, there are many in Charlotte I like, I could list for days, but these are just a few.
Other suggestions...
Dinner at Latorre's in Uptown and then salsa dancing in the little club upstairs.
Lunch at one of the nicer resturants near Concord Mills mall, then take a lap in a race car around the speedway (yes, you can do this, I have).
Dinner at one of the upscale resturants in Uptown, then check out a show at the Blumenthal or Spirit Square. They have all sorts of plays even some concerts like jazz shows.
I took a date on a cruise on a little ship up at Lake Norman a few years ago. I'm sure things like that are still offered, but I haven't looked in a while.
One thing I haven't done, but am looking forward too, is taking a date to the new White Water Center. Their resturant is open up there now and I hear it overlooks the water, so that would be pretty romantic I think.
Day trips, day trips, day trips:
Asheville, NC is a great day trip. Check out the Biltomore house and/or their funky little downtown.
Winston-Salem NC - Have lunch in their little downtown arts district and then go on a walking tour in Old Salem (do a Google search of Old Salem to see what that place is all about).
Greenville, SC - Don't sleep. Greenville SC has a nice little downtown with a bunch of shops and resturants. I wouldn't really recommend just going down there anytime, but they have some really nice festivals in the summer time that would be nice to visit for the day, and as I said, there are a lot of resturants in their little downtown.
