To be honest, Charlotte is not known for their BBQ. As some have already mentioned the best places in the area are in Shelby (Bridges), Rowan County (decent places in Granite Quarry, Rockwell, Salisbury, and Spencer) and of course, Lexington.

I believe that Bubba's cooks with gas, which in my mind is just wrong.

Bill Spoon's is decent.

Yes, you can get decent Memphis, KC, and Texas style BBQ at some places in Charlotte, but if you are looking a good selection of authentic NC style, I'm afraid you'll have to leave the city to find it.

Or do it yourself.

Mac's is ok if you're wanting commercial type place. For dive place we go to Courtney's BBQ in Clover.

No kidding. You want REAL NC style BBQ you're best bet is East of I95. Pretty much any place out there. Hell I worked at one in college that was on the Today Show (or whatever show Al Roker is on, he came in one morning while I was working). We had people come from all over to get BBQ from there. Waited on Elizabeth Edwards there once. It was Parker's BBQ in Greenville.

There's alos a place right on the river in Lilington, NC called Howards BBQ (on hwy 24 or 27, it might still be 24/27 there though) . It is delicious.

FWIW, the two places I posted are 'Eastern Style': vinegar based peppery sauce (not tomato or mustard).

Something worth trying if you are on the SE side and do not want to leave town is Kristopher's (downtown Matthews).
Eastern style and only available on Thursdays.
