Might try Chens Bistro. in Grande Promenade on the corner of N. Tryon and WT Harris. There's a couple others in there also. I'm the security guard at night there, haven't eaten at any places yet, but, they have a lot of traffic in and out of the restaurants there.

At Musashi off Park Road where most of the restaurant goers are Japanese.

Agreed. If you want all-you-can-eat sushi, get it freshly prepared at Pisces Sushi at the Metropolitain Midtown. It's like $14 and you can order as much as you want, all fresh.

I was ready for sushi today for lunch, and saw your post. Excellent recommendation. Very tasty. The nigiri was especially delicious. $12 for lunch. If you get the rice, get a half order, because they can and will charge you for waste. They tell you this in their presentation.

LOL jteskal! OP asked for everything BUT Rusan's. I don't mind Rusan's. It's not the most innovative sushi but it's tasty and fresh. Heck, the Saturday afternoon lunch rush is so huge, they're making it as quickly as they can. +1 for Pisces at the Metropolitan (I think I saw another location recently).

Koishi on Sharon Amity, close to Randolph, has really wonderful sushi! It's not a buffet, but they do offer specials/combos.

Well, I think New Zealand Cafe has the best Sushi in town! Very decent prices. But you need to consider wait for at least half an hour on the weekends...Its close to Walmart in Galleria Blvd.
